「よもぎ」とは?
よもぎは、日本をはじめとするアジア地域で古くから親しまれているハーブの一種です。キク科の植物で、茎や葉、花などを利用することができます。日本では、草餅の材料として有名ですね。

よもぎの栄養価
よもぎは、下記のようなビタミン・ミネラル・抗酸化成分などを豊富に含み、大変栄養価の高い食品です。
ビタミン
- ビタミンA:細胞の再生や免疫力の維持に関わる。
- ビタミンC:抗酸化作用があり、免疫力アップや疲労回復に効果がある。
- ビタミンE:血管を丈夫にし、血液の流れをスムーズにする効果がある。
- ビタミンK:血液凝固や骨の健康に関わる。
ミネラル
- カルシウム:骨や歯を丈夫にする。
- マグネシウム:筋肉や神経の働きに必要で、ストレス解消にも効果がある。

その他、よもぎには食物繊維なども含まれており、健康に良いといわれています。ただし、摂取量には注意が必要で、過剰摂取は身体に悪影響を及ぼすことがあります。また、アレルギーをお持ちの方は摂取を控えてください。
美味しいよもぎの選び方
よもぎは、葉がみずみずしく、葉の柔らかいものを選びましょう。また、自分自身で採る際には、よもぎの葉の繊維は強く硬いため、できるだけ若い新芽を採取するのがポイントです。
よもぎの下処理方法
- よもぎの葉を水で洗い細かいゴミを取り除き、水気をよく切ります。
- 固い茎の部分を取り除き、やわらかな葉先だけを使います。
- 沸騰したお湯に塩を少し入れ、よもぎは1分ほど茹でたら冷水にとり水気をよく切ります。

ごま油 |

作り方
- ボウルに薄力粉と卵を入れ、水を加えてよく混ぜます
- よもぎの葉を細かく刻み、ボウルに加えます
- 塩を少々加え、よく混ぜ合わせます
- フライパンにごま油を入れ、強火で熱します
- フライパンに③を流し入れ、広げて焼きます
- 焼き色がついたら、返して反対面も焼きます
- お好みで、たれ(ポン酢など)をかけてお召し上がりください
